This cart is run by a husband and wife team, Varma and Ramona Varma-Hernandez. Mr. Varma has been recognized by James Beard for his award-winning chefs Prasad.

One day Mr. Varma had an epiphany for a twist on two iconic flavors, Indian and Mexican, allow people to assemble their own creation. He also wanted to serve a wide variety of lifestyles, traditional to vegan. The ingredients for his food are organic and hormone-free. His motto is "Better for you, better for your body, better for our planet".
